Quinoa. Salad. Bacon.

INGREDIENTS

  • 3-4 tbsp. Quinoa
  • 1 tbsp. tarragon mustard
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. olive oil
  • 1/2 green salad, shredded
  • 1/2 shallot, thinly sliced
  • 1 tbsp. edamame or corn
  • 1 tbsp. pomegranate seeds
  • 1 tbsp. diced bacon
  • salt, pepper

INSTRUCTIONS

Prepare the quinoa according to the package instructions. Dress with mustard, vinegar, oil, salt and pepper. Plate with the remaining ingredients.

Tip: Prepare a large batch of quinoa on the weekend and use it up all week long.
