Sweet Potato. Dates. Fried Onions.

INGREDIENTS

  • 1 sweet potato, cooked and diced
  • 1 carrot, cooked and diced
  • 1/2 avocado
  • 2 dates
  • a pinch of cinnamon
  • salt, pepper
  • about a 1 cup of hot water
  • 1 tbsp. sliced almonds
  • 1 tbsp. fried onions

INSTRUCTIONS

Add sweet potato, carrot, avocado and dates to the blender and mix until smooth. Season with spices. Add hot water and serve with almonds and fried onions.

Tip: Prepare the soup a day ahead and then just add hot water at the office. You can buy ready made fried onions (organic).
