Quinoa. Feta Cheese. Tomatoes.

INGREDIENTS

  • 1 serving of quinoa
  • 1 tbsp. red pesto
  • 4 cherry tomatoes, sliced in half
  • 1 small piece of Feta cheese
  • 1 handful spinach
  • 1/2 shallot, sliced thinly
  • 1 tbsp. olive oil
  • 1/2 tbsp. lemon juice
  • salt, pepper

INSTRUCTIONS

Prepare the quinoa according to the instructions and mix with red pesto. Add to a jar with Feta cheese, spinach, tomatoes and shallot. For the dressing mix lemon juice and olive oil and season with salt and pepper.
