Glass Noodles. Cucumber. Red Pepper.

  • 50 g Glass noodles
  • 1 small persian Cucumber
  • 1 scallion
  • 1 red pepper
  • 1 handful spinach
  • sprouts
  • Sesame seeds
  • 1 tbsp. fresh lime juice
  • 1 tbsp. fresh orange juice
  • 1 tbsp. soy sauce or coconut aminos
  • 1 tbsp.walnut oil
  • 1/2 cm ginger root, finely chopped


Cook the glass noodles according to the instructions on the packet.

Cut the cucumber, scallion and red pepper in thin slices. Arrange in a bowl or on a plate with the glass noodles, spinach and sprouts. Sprinkle with sesame seeds. Mix together the oil, orange- and lime juice, soy sauce and ginger. Serve with the vinaigrette.

Tip: Serve with cilantro and chili for an extra kick of flavour.
