Beetroot. Cottage Cheese. Walnuts.

  • 1 beetroot cooked
  • 1/2 tbsp. olive oil
  • 1/2 tbsp. red vine vinegar
  • 2 tbsp. cottage cheese
  • 1 tbsp. currants
  • 1 tbsp. chopped walnuts
  • salt, pepper
  • Sprouts


Slice the beetroot thinly and add on a bun or roll. Drizzle with olive oil and vinegar. Mit cottage cheese with walnuts and currants and season with salt & pepper. Spread one tbsp on the beets. Add another layer of beetroot slices and cover with remaining cottage cheese and sprouts.
