Tomato. Bell Pepper. Celery.

INGREDIENTS

  • 1 juicy tomato (or canned one)
  • 1 red bell pepper
  • 4 dried pickled tomatoes
  • 1 tbsp. chopped cilantro
  • 1 celery stalk
  • 1 tbsp. lime juice
  • 3/4 tbsp. cumin
  • 1/2 tbsp. chiliflakes
  • 1/4 tbsp. paprika
  • 1 tbsp. Olive oil
  • 1/2 Avocado
  • salt, cayenne pepper

INSTRUCTIONS

Blend all ingredients except for the olive oil and avocado. When blended, drizzle olive oil while the motor is running until the soup is creamy. Thin down with water to taste. Season with salt and cayenne pepper. Cut the avocado and add to the soup.

Tip: Serve with tortilla chips for some crunch.
