Couscous. Apple. Beans.

Ingredients

  • 4 tbsp. instant couscous
  • 70 ml boiling water
  • ½ an apple, finely diced
  • 1 red bell pepper, finely diced
  • 3 tbsp. canned kidney beans, drained
  • 3 tbsp. canned corn, drained
  • 1 handful of fresh parsley, chopped
  • 2 lemons, juiced
  • 2 tbsp. olive oil
  • salt, pepper
  • 2 tbsp. greek yogurt
  • some garden cress

Instructions

Add the couscous to a bowl and pour over the boiling water. Cover with a kitchen towel for about 5 minutes. Stir and make sure the grains are soft (otherwise add more water).

Mix the apple and bell pepper with the beans and corn. Add the couscous, parsley, lemon juice and olive oil. Mix and season with salt and pepper. Serve with Greek yogurt and water cress.
