- 1 small beet (cooked, peeled, diced)
- 2 tbsp. cooked chickpeas, peeled
- 2 tbsp. fresh lemon juice
- 1/2 tsp. tahnini
- healthy pinch salt and black pepper
- 1 tbsp. olive oil
- 1/2 tsp. sesame seeds
- some lemon zest
Add all ingredients except for olive oil and blend until smooth. Drizzle in olive oil as the hummus is mixing.Taste and adjust seasonings as needed, adding more salt, lemon juice or olive oil if needed. Top with sesame seeds and lemon zest.
Tipp: If you have that extra time try roasting your beets in the oven for some great flavour.
