Couscous. Chicken. Sweet Potato.

  • 1 small sweet potato
  • 1/2 chicken breast filet
  • 3-4 drops of chipotle sauce
  • 2 tbsp. instant couscous
  • Juice and zest of one lime
  • 3 salad leaves, shredded
  • 3 tbsp. greek yogurt
  • salt & pepper
  • 2 tbsp. chopped cilantro
  • 1 tbsp. grated cheddar


Peel, dice and cook the sweet potato until soft. Roast the chicken and season it with the chipotle sauce. Don’t worry about reheating them, the dish can be served cold. Prepare the couscous according to the instructions, mix it with the lime juice and scoop in to a mason jar. Add the salad on top. Mix the greek yogurt with the lime zests and some salt & pepper to taste and add it on top of the salad. Then add the chicken as well as the sweet potato dices and cilantro. Top with some more greek yogurt and cheddar.

Tip: Prepare the sweet potato and chicken at home. Keep it refrigerated until you leave for the office.
