Carrot. Corn. Cilantro.

INGREDIENTS

  • 3 cooked, cut carrots
  • 1 thinly sliced scallion
  • 1 can corn
  • 250 ml vegetable stock
  • 1/2 cup heavy cream
  • 1/2 tbsp. paprika powder
  • 1 tbsp. lemon juice
  • chili
  • salt, pepper
  • 1 tbsp. chopped cilantro

INSTRUCTIONS

Roast corn, carrots and scallion for some minutes. Add vegetable stock and bring to a boil. Blend until smooth. Season with heavy cream, paprika powder, lemon juice, chili, salt, pepper and stir well.

Serve with cilantro.
